Irish pancakes:
Ingredients: 1lb flour , 1 teaspoon bread soda, enough buttermilk to make a thick batter , butter and caster sugar for spreading.
Method: Sift flour with salt and bread soda. Break eggs into a well in the centre of flour and mix well. Beat in enough buttermilk to make a thick batter. Fry in spoonfuls on a greased pan. Butter them as they come from the pan and sprinkle thickly with sugar.
