Shrove Tuesday

It is Shrove Tuesday, and the men from the fields tread quickly coming in , because they know there will be pancakes for supper- real pancakes , none of your paper-thin rolled foolishness , but good substantial buttermilk pancakes.
There`s a clatter of them as high as your hip waiting on the hob , with melted butter and sugar trickling down the sides.
What matter if the women of the house has developed thawlock from beating and mixing and turning pancakes for the past two hours? Its all in a good cause.
Is`nt it Pancake night?

Irish pancakes:
Ingredients: 1lb flour , 1 teaspoon bread soda, enough buttermilk to make a thick batter , butter and caster sugar for spreading.

Method: Sift flour with salt and bread soda. Break eggs into a well in the centre of flour and mix well. Beat in enough buttermilk to make a thick batter. Fry in spoonfuls on a greased pan. Butter them as they come from the pan and sprinkle thickly with sugar.
